Why do we convict criminals if there's even a chance they can't help it?

The legal standard is weather the person knew what they were doing and can understand the consequences of their actions. This is basic competency. The legal standard does not require 100% certainty because empirically there is no 100% You only need to believe beyond a reasonable doubt the person committed the crime.
